Comparison of Physicochemical Characteristics among Radish Cultivars after Storage


Abstract
To determine the quality of radish roots after storage, the characteristics of radish cultivars, including ¢¥Altari¢¥, ¢¥Baekkyeung¢¥, ¢¥Daehyeungchuseok¢¥, and ¢¥Youngkwang¢¥ were compared. The changes in soluble solids content appeared similar pattern among cultivars during storage at 5¡É. All cultivars of radish showed pH 6.1 approximately, and pH levels were not changed during storage for 11 weeks. Thus soluble solids content and pH were unfit for the indices of quality determination of radish cultivars. To investigate the activities of cell wall degrading enzyme, cellulase, pectinesterase, and polygalacturonase were analyzed. Whereas higher activity of polygalacturonase was detected from ¢¥Baekkyeung¢¥ and ¢¥Daehyeungchuseok¢¥, other two enzyme activities were similar among the cultivars of radish. The content of Ca^(++) in cell wall was 5 times or more than that of Mg^(++) in all cultivars. Though the contents of two ions were higher in ¢¥Baekkyeung¢¥ and ¢¥Altari¢¥ than other cultivars at harvest, Ca^(++) level was maintained highly in ¢¥Baekkyeung¢¥ and the level decreased remarkably in ¢¥Altari¢¥. The ratio of water soluble pectin of total pectin was changed less in ¢¥Baekkyeung¢¥ than ¢¥Altari¢¥ . Also water content was lost rapidly in root of ¢¥Altari¢¥. Those coincided with the result that ¢¥Baekkyeung¢¥ was better for storibility of radish roots than other cultivars, especially including ¢¥Altari¢¥.
